Old Library


Had to pay the Old Library a visit today, because all the advocacy books at the Law Library had been snapped up for Easter, and I had to use the old law editions at the Old Library. Was slightly resentful at first, because I didn't want to trudge all the way there. But it turned out to be a very nice experience! Its was nice and deserted (because no one cares about old books) and it gives me a kick walking around the basement, among rows and rows of old books, with no one else to share/spoil the moment.

Baked Teriyaki Chicken


Ingredients
1 tablespoon cornstarch
1 tablespoon cold water
1/2 cup white sugar
1/2 cup soy sauce
1/4 cup cider vinegar
1 clove garlic, minced
1/2 teaspoon ground ginger
1/4 teaspoon ground black pepper
12 skinless chicken thighs

Directions
In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
Preheat oven to 220 degrees C.
Place chicken pieces in a baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.
Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 30 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.

Term has very abruptly come to an end, and I suddenly find myself with free time. (haven't had that in awhile!) I've been reflecting on how term has been, and I realised that I can just oddly sum it up with one word. Efficient. Gone were those countless days where I spent daydreaming, wondering and wandering. :) It's nice to have some me time now, with a good book and a cuppa tea for company.
